  • 2 cups fresh spinach (sautéed and chopped)
  • 8 oz low-moisture mozzarella (cubed)
  • 3 cloves garlic (minced)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley
  • Salt
  • Black pepper
  • Olive oil

Instructions

  1. Sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted. Cool slightly, then chop finely.
  2. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, salt, pepper, egg, and prepared spinach. Mix gently.
  3. Form meatballs by flattening portions of the mixture around mozzarella cubes.
  4. Sear meatballs in olive oil over medium heat until golden brown on all sides.
  5. Cook through by covering the skillet or transferring to an oven preheated to 375°F (190°C) for 10-12 minutes.
