  • 1 lb boneless skinless chicken (breast or thighs), chopped
  • 1 tbsp olive oil
  • 2 tbsp honey
  • Juice of 1 lime
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 ripe avocado, diced
  • 1 head romaine or butter lettuce, leaves separated
  • 1 cup canned black beans, rinsed
  • 1 cup corn (canned or fresh)
  • 2 tbsp chopped cilantro
  • 1 cup Greek yogurt or sour cream
  • 1 tbsp lime juice

Instructions

  1. In a skillet over medium heat, heat olive oil and add chopped chicken. Stir in honey, lime juice, garlic, cumin, smoked paprika, salt, and pepper. Cook for about 8–10 minutes until cooked through.
  2. In a small bowl, mix Greek yogurt (or sour cream), lime juice, chipotle powder (or smoked paprika), and salt until smooth; chill until ready.
  3. Assemble by laying out lettuce leaves and filling each with chicken mixture. Top with diced avocado, black beans, corn, and cilantro.
  4. Drizzle the sauce over each cup just before serving.
