  • 1 salmon fillet (approx. 120-150g)
  • 1 tsp honey
  • 1 tsp soy sauce or tamari
  • 1 cup cooked basmati rice
  • 1 avocado, sliced
  • 1 cup cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp chopped fresh mint
  • 1 tbsp chopped parsley
  • 1 tsp olive oil
  • Squeeze of lemon juice
  • Salt & pepper to taste

Instructions

  1. In a mixing bowl, combine honey, soy sauce (or tamari), and olive oil. Brush the mixture over the salmon fillet.
  2. Heat a non-stick skillet over medium-high heat and cook the marinated salmon for about 3-4 minutes on each side until caramelized.
  3. In another bowl, toss together cherry tomatoes, chopped mint, parsley, olive oil, lemon juice, salt, and pepper to create the salad.
  4. To assemble your bowl: layer cooked basmati rice as the base, top with cooked salmon, sliced avocado, cucumber, and finish with the tomato herb salad.
