Ingredients

  • Cheese tortellini
  • Chicken breast
  • Fresh broccoli
  • Heavy cream
  • Parmesan cheese
  • Garlic cloves
  • Butter
  • Olive oil

Instructions

  1. Cook the tortellini in a large pot of salted boiling water according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. Steam the broccoli florets for 3-4 minutes until bright green and crisp-tender. Plunge into ice water, drain and set aside.
  3. Season chicken cubes with salt and pepper. Sear in a skillet with olive oil over medium-high heat until golden brown and cooked through, about 6-8 minutes. Remove from skillet.
  4. In the same skillet, melt butter over medium heat and sauté minced garlic for 1 minute until fragrant. Slowly whisk in heavy cream.
  5. Gradually add Parmesan cheese off heat until smooth. Adjust thickness with reserved pasta water if needed.
  6. Return chicken to skillet with cooked tortellini and steamed broccoli; toss gently until well coated with sauce.
