  • 1/2 English cucumber (cut into quarters lengthwise and sliced)
  • 3 cups halved cherry tomatoes
  • 1 large diced avocado
  • 1/3 cup chopped basil leaves
  • 8 oz fresh mozzarella balls (or 1 cup diced fresh mozzarella)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic (peeled and either pressed or grated)
  • 1/2 teaspoon fine sea salt (adjust to taste)
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Wash and slice the cucumber into quarters lengthwise and then into bite-sized pieces.
  2. Halve the cherry tomatoes and dice the avocado.
  3. In a mixing bowl, combine the cucumber, cherry tomatoes, diced avocado, and mozzarella cheese. Add chopped basil leaves.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, pressed garlic, sea salt, and black pepper until well combined.
  5. Pour the dressing over the salad mixture and gently toss everything together until well coated.
  6. Serve immediately for maximum freshness.
