  • 1 sheet puff pastry, thawed
  • 200g mushrooms, finely chopped
  • 150g fresh spinach
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 100g cheese (mozzarella or cheddar), grated
  • 2 tablespoons cream cheese
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté onions and garlic until translucent.
  3. Add chopped mushrooms; cook until soft.
  4. Stir in spinach; season with salt and pepper until wilted.
  5. Remove from heat; let cool slightly. Combine with grated cheese and cream cheese in a bowl.
  6. Roll out puff pastry on a floured surface; cut into 24 squares.
  7. Place about one teaspoon of filling in the center of each square and fold over to seal.
  8. Brush tops with beaten egg for shine.
  9. Bake on parchment-lined baking sheet for 20-25 minutes or until golden brown.
  10. Cool on a wire rack for about 10 minutes before serving.
