  • 1 cup pumpkin puree
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup liquid-state coconut oil
  • 1/4 cup sour cream (or Greek yogurt)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt (optional)
  • 4 ounces softened cream cheese
  • Additional granulated sugar for filling

Instructions

  1. Preheat your oven to 350°F and prepare a loaf pan by greasing it.
  2. In a large bowl, whisk together the egg, pumpkin puree, brown sugar, granulated sugar, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, and nutmeg until smooth.
  3. Gently fold in flour, baking powder, baking soda, and salt until just combined.
  4. Pour two-thirds of the batter into the prepared pan.
  5. In another bowl, mix softened cream cheese with additional granulated sugar until smooth. Spread the cream cheese mixture over the batter.
  6. Top with remaining batter and smooth out.
  7. Bake for about 48 minutes or until a toothpick comes out clean from the center.
  8. Allow cooling before slicing.
