  • 34 lbs organic chicken, skin removed
  • 1 (14 oz.) can full-fat coconut milk
  • 23 Tbsps Jamaican curry powder
  • 1 medium bell pepper, chopped
  • 2 medium russet potatoes, cubed
  • 23 scotch bonnet peppers (to taste)
  • 1 cup organic chicken stock (low sodium)
  • Fresh ginger and garlic

Instructions

  1. Marinate the chicken pieces in Jamaican green seasoning and browning sauce for at least 30 minutes.
  2. In a large pot or Dutch oven, heat olive oil over medium heat. Sauté minced garlic and ginger until fragrant.
  3. Add chopped bell pepper and onions; cook until softened.
  4. Brown the marinated chicken pieces in the pot for about 5–7 minutes, then stir in curry powder.
  5. Pour in coconut milk and chicken stock; bring to a gentle boil.
  6. Add cubed potatoes, carrots, thyme sprigs, brown sugar, smoked paprika, and scotch bonnet peppers. Cover and simmer for about 30 minutes until the chicken is tender.
